Cat8 exists for one job: short, very fast links inside a rack. It is rated for 40GBase-T, and the standard limits that speed to about 30m, which tells you what it is for — switch to switch, switch to server, not a run across a house.
Every Cat8 lead is heavily shielded S/FTP, which makes it thick and stiff compared with Cat6. That is the trade-off, and it is the reason Cat8 is the wrong answer for a desk or a games console: the cable costs more, bends worse and gives you nothing at all unless both ends have 25 or 40 Gigabit network interfaces.
